Join chef Giovanna Hilaj for for the Spring edition of our fun, hands-on homemade pasta class! Tonight Giovanna will show you how to make two delicious types of stuffed pasta that are typical of her home region of Emilia-Romagna, plus two simple sauces that pair perfectly with them!

The first and most commonly known pasta is the raviolo (i.e ravioli), a bite sized stuffed pasta that's often cut in squares, but can also be found in other shapes, like circles (called soli, or "suns") and crescents (called mezzelune, or "half moons").

The second pasta is a little more modern in origin. It's called caramella or "candy" because its oblong shape and twisted end makes it resemble classic italian "caramelle" (candies) that often come in colourful wrappers twisted on each end.

As you probably know by now, we like to work local, seasonal ingredients into the menu whenever we can. So tonight we'll be featuring Ontario spring vegetables in both pastas! When we're done making the two pasta dishes together, you will sit down to enjoy the meal, accompanied by a seasonal salad, and finished with a little dolce to complete the meal.

ABOUT GIOVANNA

"When you grow up in Emilia Romagna," says chef Giovanna, "there are two things that you can't live without: piadina and fresh egg pasta. Since a very young age I have 'had my hands in the dough' (le mani in pasta, as we say), and one dough after another here I am! I spent the last 10 years working in the world of restaurants, and over those years more my love for the traditional food of my own home only grew. I'm looking forward to sharing this love with anyone who wants to join me in this experience."
