About this experience

Get ready to roll up your sleeves and dig into one of Italy’s most beloved comfort foods - homemade lasagna! With the help of Chef Bruno, Cucinato's Gaia Massai is going to lead tonight's hands-on class, where we'll prepare fresh egg pasta from scratch, and transform it into two delicious, hearty types of lasagna.

First, we’ll tackle the traditional Lasagna alla Bolognese, using freshly rolled pasta sheets, a slow‑cooked meat ragù and béchamel. Then we’ll prepare a vegetarian Lasagna Verde with the classic combination of ricotta, spinach and a rich tomato sauce. 

And as a bonus, we will also show you a short cut for making a quick lasagna when you are short on time or you don't feel like making your own dough! 

Once we're done, you'll sit down to enjoy the meal we've prepared, served by the Cucinato team! 

 

A Little Slice Lasagna History ...

Lasagna descends from lagana — thin sheets of wheat flour eaten in ancient Rome. By the Middle Ages, cooks were already layering boiled dough with cheese, and in Bologna’s 19th‑century kitchens the modern “classic” emerged, featuring spinach‑green egg pasta, ragù and béchamel. Yet across Italy there are countless variations—southern cooks favour dried pasta with ricotta and mozzarella, northern cooks use fresh green pasta, and regions from Molise to Sardinia have their own unique twists.

Welcome snack - Homemade focaccia 

Lasagna alla Bolognese- Slow cooked ragu' alla bolognese and bechamel 

Lasagna Verde- Spinach infused dough layered with ricotta, spinach and tomato sauce

Insalata invernale alla Toscana- Tuscan inspired winter salad   

Caffe' e Dolcino- Espresso and a little sweet to finish the meal

We also offer corkage, the fee is $15 per bottle.
