Join us for a fun, interactive cooking class and dinner event featuring the best of Piemonte, the northwestern tip of Italy bordering France and Switzerland. The hearty dishes we'll prepare this evening are perfect to fortify you though the last weeks of winter!
ABOUT PIEMONTE
The name Piemonte (Piedmont) might not be as well known outside of Italy as some of the country's other regions like Tuscany, Puglia or Sicily, but many of its culinary products are well known internationally. Ever heard of Nutella or Lavazza? Barolo or Barberesco wines? Or the Slow Food movement? Not to mention some of the best truffles, cheese and confections in all of Italy. When it comes to food culture, Piemonte is indeed world class!
The region is also know of for its scenic towns and the majestic Alpine mountains that give it its name (which means, "at the foot of the mountain"). Historically, Piemonte was a diving force behind the eighteenth century Italian unification movement, and its beautiful capital, Torino (Turin), was Italy's first capital city. Today Piemonte a major centre of commerce (home to companies like Fiat and Ferrero), culture, artisanal food production and, in the wintertime, a very popular destination for skiers.
ABOUT TONIGHT'S MENU
The most famous homemade pasta from the region is tajarin, local dialect for a "cut" egg pasta similar to tagliatelle, but richer and smoother due to its high yolk content. This silky, deep yellow pasta pairs perfectly with another typical specialty - fresh truffles - which are still in season till late March / early April.
Tonight's second course is all about comfort foods like slow cooked Piedmontese cacciatora and rich, cheesy, oven baked savoiarda potatoes. We'll also make peperonata - a dish you'll find everywhere in Italy but always made slightly different according to local tastes. In Piemonte they serve it with a kind of anchovy sauce locals pair with other typical dishes like the famous vitello tonnato.
And lastly, for dessert, something a little more refined, featuring the characteristic Piedmontese blend of hazelnut and chocolate: the elegant baci di dama, or so called "lady kiss" cookies.
When we’re done cooking, guests will sit down together at a long harvest table to enjoy the meal we've prepared together, served by the Cucinato team!
MENU
Tajarin al tartufo nero - A rich, luxurious variety of traditional egg pasta, tossed with butter, freshly grated Parmigiano-Reggiano and shaved fresh black truffle* (see note)
Pollo alla cacciatora - Piemonte-style version of this classic dish: chicken braised in aromatics, Gari white wine, tomatoes and broth
Patate alla savoiarda - A decadent dish named after Italy's first royal family, a creamy, cheesy baked potato dish somewhat similar (but more decadent) than scalloped potatoes
Peperonata - Bell peppers stewed in tomato, anchovy and an (optional) touch of of vinegar
Baci di Dama - So called "lady's kisses" biscotti: two delicate, dome-shaped biscuits with a chocolate-hazelnut filling. Served with espresso.
* Note Fresh truffles are a natural seasonal product typically available this time of year. If nature does not cooperate for some reason, this pasta will be served with a mixed porcini-mushroom ragù.
