Sicily is the largest island in the Mediterranean, and thanks to its complex history boasts one of the richest and most diverse cuisines in all of the region.
Originally settled by the Greeks in the BC era, Sicily was under Arab rule from the ninth to eleventh centuries, and over the years since has taken many culinary influences from the Normans, Spanish, North Africans, and the island's own substantial Jewish population.
The resulting fusion of spices, fresh produce and seafood, cooking techniques like "agrodolce" - and some of the best street foods in Italy - make Sicilian cooking truly unique!
Join us for a hands-on cooking class where we'll prepare a delicious sampling of traditional Sicilian dishes. When we're done preparing the meal together,
Antipasto
Panelle - The famous street food of Palermo, chickpea fritters
Primo
Spaghetti con pesto di pistacchio e pomodorini semi secchi - Spaghetti with pistachio pesto and semi dried cherry tomatoes
Secondo e contorni
Filetto di dentice con salsa alla menta - Filet of snapper served with green mint salsa
Insalata pantesca - From the coastal island of Pantelleria, a hearty, refreshing salad made with potatoes, red onions, olives, capers and oregano
