About this experience

Join olive oil & wine producer Gaia Massai for the spring edition of her hands-on Tuscan cooking series,  featuring some of her favourite dishes from her childhood in the rural town of San Miniato, Pisa. 

The evening begins with a welcome snack, where you'll enjoy a light selection of typical antipasti and learn a little about Gaia's home region and the dishes we'll be prepare this evening. Then it's time to get cooking! 

With peas and chicory in season, it's the perfect time of year to elevate the staple pasta e piselli with fresh produce and and vibrant yellow saffron for our first course. Then we'll learn to make a classic Tuscan Sunday roast (arista al forno), stuffed with more greens (spinach), herbs, and for added flavour, Tuscan prosciutto. Plus a couple of delicious, traditional contorni to pair with the roast. 

For dessert we'll prepare a delicious fried confection often enjoyed at Tuscan festivals this time of year, including Carnevale and La Festa di San Giuseppe. You don't often find fritelle di riso (rice fritters) here in Toronto, perhaps because they're a little more complicated to make that other fried desserts like bomboloni or chiacchiere, but trust us - they are worth the effort! 

When we’re done cooking, guests will sit down together at a long harvest table to enjoy the meal, served by the Cucinato team.

Antipasti 

Bruschetta e salumi - Bruschetta with fava pure served with finocchiona salami and pecorino cheese  

Primo 
Pasta con piselli, erbe di campo e zafferano - Mezze maniche with fresh peas, chicory, saffron and (optional) pancetta 

Secondo e contorni 
Arista ripiena - Stuffed pork loin (or chicken) with spinach and sausage 
Cavolo nero ripassato - Sautéed black kale with garlic 
Patate alla ghiotta - Ghiotta style roasted potatoes 

Dolce 
Frittelle di riso - Tuscan style rice fritters

We also offer corkage, the fee is $15 per bottle.
