About this experience

Tucked between Tuscany, Lazio and Le Marche, Umbria is Italy’s green heart—a land of wooded hills, medieval hill towns and ancient farming traditions. Rooted in the traditions of cucina contadina, Umbrian cooking celebrates the earthy abundance of autumn and winter: prized black truffles, wild mushrooms, lentils, farro, pecorino and the exceptional cured meats of Norcia. In this class, we’ll bring these flavours to the table with wild boar salami, handmade Strengozzi pasta, Veal in Umbrian sauce with typical lentils and black kale and the apples and dried fruit traditional Rocciata Umbra dessert, for a taste of the region’s rustic and deeply comforting culinary traditions.

MENU 

Tagliere di Norcia- a selection of Norcia-style cured meats and wild boar salami

Crostini con funghi trifolati- 
rustic crostini topped with mushrooms sautéed with garlic, parsley and extra virgin olive oil

Strengozzi alla Spoletina- handmade eggless pasta with chili, tomatoes and optional guanciale

Bistecca del Curato- veal with an aromatic Umbrian sauce of herbs, garlic, anchovy, lemon and mustard

Lenticchie di Castelluccio alle erbe- slow cooked lentils in herbs 

Cavolo nero ripassato- sautéed black kale

Rocciata Umbra- apple, walnut and dried fruit pastry

We also offer corkage, the fee is $15 per bottle.

• Tickets to Cucinato events are transferable - you can give them to someone else if you can’t attend (but please notify Cucinato in advance!)
